When theHumm heard that Petra Graber was stepping back from The Good Food Co, we decided that a semi-regular column would be a perfect way for readers to get a taste of Petra’s signature dishes. The Good Food Co hummus was inspired by my dad’s extra-garlicky concoction that he would occasionally whip up in a blender at home. I started selling it at the Carleton Place farmers’ market before opening the café and it became a well-loved staple in our deli fridge along with our tabbouleh.
Good Food Co Hummus
⅓ cup garlic cloves, peeled
1¼ teaspoons salt
4 x 398 mL cans chickpeas, drained + rinsed
¼ cup olive oil
⅓ cup lemon juice
2 teaspoons ground cumin
½ cup tahini paste
¼ cup parsley, washed + chopped fine
Process garlic with salt in food processor or blender;
Add remaining ingredients and process until smooth — drizzle in more olive oil if thinner consistency desired;
Adjust salt as necessary;
Store in sealed container in fridge for up to 1 week.
